The location, part of South Street's rich tapestry, has witnessed various industries over the centuries, including timber yards, shipping wharves, and cement works.
Dill embodies Cropper's commitment to localism and sustainability. The restaurant collaborates closely with nearby farms to source fresh, seasonal produce, celebrating the region’s farmers and growers. Complementing the menu, Dill offers a curated selection of low-intervention wines and features beverages from local breweries, celebrating Lewes's renowned brewing heritage.
At the heart of Dill’s approach is its sharing-style menu, designed to bring people together over food.
